It’s been a wonderful experience. I hope you’ve enjoyed it too.Our final recipe is a meat-free delicious-tasting burger that won’t break the bank or take up too much of your time. As always, it’s one the kids can get involved with and as we know, #kidswhocookeatIngredients: Bean Burgers: (Serves 6)• 2 tins (400g) black, white, or pinto beans or black-eyed peas• 1 cup dried breadcrumbs• 2 large eggs, lightly beaten• 1 teaspoon coarsely ground black pepper• 1/2 teaspoon garlic powder• Extra Flavorings – (optional) – fajita flavouring, or1/4 tsp each oregano & basil• 6 good-quality hamburger bunsMethodDrain 1 can of beans, reserving the liquid, and mash the beans in a medium bowl. Drain the second can, add to the bowl with the breadcrumbs, eggs, pepper, and garlic powder. Stir in extra flavorings if using. If necessary, add a little of the bean liquid until the mixture holds together but is not wet. Divide into 6 equal portions and shape into 4-inch burgers.Warm the buns in a 300°F/150°C/Gas Mark 2 oven for about 5 minutes. Meanwhile, heat 1 tbp olive or coconut oil in a large (12-inch) frying pan over medi-um-high heat. Add the burgers and cook, turning only once, until a crisp brown crust forms on both sides, about 6 minutes total. If you’ve chosen a burger that gets topped with cheese, add it now. Cover the frying pan, turn the heat to low, and let the burgers continue to cook until the cheese melts. Thank you to everyone who helped them prepare for this Holy Sacrament.On 27th April 2017 the girls of Réalt na Mara G.N.S. received the Sacrament of Confirmation in Star of the Sea Church, Mornington. All their hard work and preparation throughout the year certainly paid off- it was a great occasion for all involved! The celebrations continued the next day with a well deserved day out for the pupils. The busy term ended with a Graduation Mass for the sixth class girls leaving our school. It was a bit different, I don’t remember driving jargon like ‘peep and creep’, or ‘sweeping corners’. We weren’t even obliged to have 10 pro-fessional lessons. Most people I know were thaught on Dol-lymount beach with the driving school of Dad. That was never going to happen for me. I had witnessed the horror of my Dad teaching my mother to drive and it was not pretty, usually ending in tears and that was just us kids in the back seat. He himself had learned the hard way – at 15 years of age, employed as a van boy, the driver didn’t turn up for work, so he was sent to Cork, with a fully loaded rigid truck, having only watched someone drive up to that point. In an era of no tests, no speed, very little traffic, bad roads and even worse regu-lation, he was self-thought (not recommended!) and was actually a very good driver. He hung up his keys over 50 years later having never had an accident. But now high powered cars, fast roads and lots of aggression out there means you need to know what you’re doing. My driving instructor took me out on les-sons in the worst conditions possible, on the grounds that I’d have to drive in them sometime, and although I used to have pains in my arms after every lesson from tension, he was right and I managed to pass my test first time (insert smug feel-ing here).Fast forward to now and here I am with ‘L’ plates up again, this time for NO.1. He asks some interesting questions, like can I see some of the car in the side mirrors? I don’t know. I’ve never thought about it. I check the next time I’m driving. Yes I can. How do you corner smoothly? Brake in- accelerate out? but in a smooth action? I’m not sure how much help I am, and I’m afraid I’ll confuse the issue with how he’s being taught professionally, and trying to remember stuff like keeping my hands at ten to two, and to feed and grab rather than using the heel of my hand (Fast and furious style) to steer.
